Here’s a delicious recipe that was entered into our Scrumptious Spring Sweepstakes– No Bake Cherry Cheesecake…. Yum Yum Yum indeed!

“This no bake cheesecake has always been very popular in my family, partly because it’s my mom’s favorite dessert. 🙂 Once I was old enough to make it on my own, it became tradition that every year I make this cake for my mom’s birthday.

It’s very good with other pie fillings as well, but Cherry has always been our favorite.”

Recipe:

CRUST:
1 cup graham wafer crumbs
1/4 cup sugar
1/4 cup melted butter or margerine

FILLING:
1 small tub Cool Whip
8 0z. pkg cream cheese (room temperature)
1/2 cup icing sugar

TOP:
1 can Cherry pie filling (or other fruit)

Method:
Mix crust ingredients and press into a 9 inch pie plate; let it sit in the refrigerator at least 20 minutes.

In a separate bowl, Beat together cream cheese and icing sugar until smooth and creamy. Add Cool Whip and beat until mixed. Scoop into pie shell. Top with pie filling. Chill 3 hours before serving.
