Clafouti – [kla-foo-TEE] is a country-French dessert that originated in Limousin region of France. It is a delicate, little delight filled with fresh cherries and a baked custard. The wonderful thing about this recipe is that depending on the season, you can substitute different fruits that would taste the best at that time of year. Some of our favorites are plums, apples, and cranberries- all taste wonderful with our Rodelle Vanillas!

After you’ve chosen your fruit (we chose red cherries) and have started the vanilla bean batter, simply put the fruit in the pie pan. You will cover the cherries in the batter and bake for ten minutes at 375°F. Then you will reduce the heat to 350°F, and will continue to bake the Clafouti (for up to 35 minutes) to your preference. Some people prefer the batter to be cake-like and others prefer it to have a custard-like texture. The longer you bake it, the more cake-like it will become.

This recipe takes about an hour to create, but the results are more than worth it! You will end up with six little gourmet masterpieces filled with rich cherries and charming vanilla bean flecks that add a smooth, sweet essence to your desserts.
