We partnered with our friend and cookie-maker extraordinaire, Luckybites, to create these dreamy Easter Bunny Linzer Cookies! They are made with not one, not two, but three(!) Rodelle products so you know they are packed with delicious flavor! Michele at luckybites has been making cookies for special orders, clients and occasions for years and found our Pure Almond Extract on Amazon (one of our most popular products) and we were thrilled when she reached out with some new ideas and ways to create memorable cookies with our ingredients.
For a twist on the traditional powdered sugar Linzer cookie, Michele used a mixture of Organic Dutch Processed Baking Cocoa and Organic Hot Cocoa, and we are in love! The combination of the sweet Hot Cocoa mix and rich flavor of the Organic Baking Cocoa perfectly complements the filling of melted white chocolate. The cocoa bunnies are filled with melted white chocolate tinted in various shades. To make the filling, simply melt white chocolate chips in a microwave for 20-30 seconds, or until soft enough to mix. add food color a drop at a time till you achieve desired shade.
If you don’t have white chocolate on hand, tinted royal icing in a thicker consistency would do just fine.
