This is a truly great example of a “funny in hindsight” story!!

“This story takes place just recently on my 25th birthday. As usual I completely underestimated the amount of time required to make all the appetizers I was planning on making for my party.   I also tend to do things that are probably unnecessary even though I am in a time crunch.

For example, making homemade pumpkin puree for my pumpkin dip instead of simply buying a can or making my own limeade for my 3 gallons of Margaritas instead of buying the store bought version. This story revolves around my homemade pumpkin puree.

I was already running completely behind since I still needed to finish my hair, make up & change clothes before my party and was entirely regretting my pumpkin in the oven. After it finally finished roasting I acquired several small burns because I was unwilling to let it cool down and immediately put it in the blender, covering the top bit with a towel so steam could escape. The blender was terrible so the pumpkin kept getting stuck and I would have to give it a stir every 15 seconds or so.

Unfortunately one of the times I did not wait for the metal blade to come to a complete stop before giving it a quick stir. My metal spoon clashed with the blades and all of a sudden it exploded and I had HOT pumpkin puree in my eyes, all over my face and in my freshly washed hair! I immediately ran to the sink to wash off only to regret it once I saw the mess that it caused! It was all over the cabinets, the ceiling, and the counter & floors! It was one of those moments where you are not sure whether to laugh or cry. I chose to laugh, although according to Lesley Gore, “It’s my birthday I can cry if I want to!”
