Our Vanilla Summer Salsa is a unique and sweet twist on a classic dip, perfect for hot summer days or as an appetizer that is just as refreshing as it is delicious! The peaches and watermelon provide a nice sweetness that is earthy and tasty, complimented by a subtle sweet, creamy, and floral vanilla flavor from Rodelle’s Gourmet Vanilla Extract and Vanilla Beans. The sharp, pungent, and slightly spicy flavors from the jalapeño pepper and red onion round out the salsa beautifully. Perfect for serving with your favorite protein, sandwich, or for dipping with chips- yum!

Ingredients
- 2 peaches, fresh, cut into wedges
- 2 cups seedless watermelon, cut into 1” cubes
- ½ tsp Rodelle Gourmet Vanilla Extract
- 1 Rodelle Vanilla Bean, split and scraped
- 1 jalapeno pepper, seeded and diced (option to leave seeds in for more spice)
- ½ cup red onion, diced
- 1 tsp kosher salt
- 1/8 tsp black pepper, ground

Directions
- In the bowl of a food processor, pulse the peaches and Rodelle Vanilla Bean seeds until chopped to a medium-chunk consistency, about 15 seconds. Set aside in a separate bowl.
- In the food processor bowl (no need to rinse the bowl out), add the jalapeno, onion, salt, and pepper and pulse until finely chopped, about 15 seconds.
- Add the watermelon and Rodelle Gourmet Vanilla Extract, and pulse for 1-2 seconds so that the watermelon is still chunky (but not too liquidy).
- Transfer to the bowl with the peaches in it.
- Stir well to combine and refrigerate for at least an hour before serving to marry the flavors.
- Serve with white fish, pork chops, chicken, pulled pork sandwiches, or with chips.
Tips
- Refrigerate until service
- Garnish with pomegranate seeds or pumpkin seeds for a crunch and additional element of color
