Ingredients
15 apples, peeled, cored, and chopped
into small cubes. Use a blend of
apples for a fuller flavor.
1 cup cane sugar
½ cup brown sugar
2 tsp cinnamon
3 Rodelle Vanilla Beans, split and
scraped (reserve bean pod)
1/2 tsp ground cloves
1/2 tsp salt
Directions
Place all ingredients into a crock
pot and stir to blend. Cover and cook
on high for about an hour.
Reduce heat to low, stir, and then
add the reserved Rodelle Vanilla Bean
pods to top of the apples. At this
point taste the apple mixture. If you
want it sweeter, add more sugar, but
not more than 1 cup.
Cook on low heat, stirring
occasionally, until mixture is
thickened and dark brown (about 10 to
11 hours).
Carefully remove the vanilla bean
pods, then using an immersion
blender, blend apple mixture until
smooth.
Cook uncovered on low heat for
another hour. Cool slightly before
spooning into containers.
Cover and refrigerate, or freeze.
