These cookies taste just like hot cocoa. Sweet and chocolatey with a hint of vanilla and to top it off, a marshmallow placed right in the center!

Ingredients
  • 1/2 c. unsalted butter, softened
  • 3/4 c. granulated sugar
  • 1/2 c. packed light brown sugar
  • 1 egg
  • 1tsp Rodelle Pure Vanilla Extract
  • 1 1/2c. All Purpose flour
  • 1/4c. Rodelle Gourmet Baking Cocoa
  • 1/2tsp. Salt
  • 1/2 tsp baking soda
  • 1tsp baking powder
  • 1/2 c. semisweet chocoalte chips
  • 12 large marshmallows, cut in half horizontally or 1 cup vanilla marshmallow bites

  1. Preheat oven to 375F
  2. Line a baking sheet with parchment paper and set aside
  3. Cream butter and sugars together until light and fluffy.
  4. Beat in egg and vanilla until combined.
  5. In a separate bowl, whisk together flour, baking cocoa, baking soda, baking powder, and salt
  6. Add the dry mix to the butter mixture beat on low speed until the dough is formed
  7. Once dough is formed, gently stir in chocolate chips and mallow bites, if using.
  8. Scoop dough using a medium cookie scoop (~1 tablespoon), and place 2 inches apart on preppared baking sheet
  9. Bake for 8-10 minutes, or until base of cookie begins to set. DO NOT OVERBAKE
  10. Pull cookies from oven, and place half marshmallow (if using), cut side down onto cookie and place in oven for another 2 minutes.
  11. After cookies have finished baking, let cool for a few minutes on the baking sheet, then transfer to a wire cooling rack.
  12. Let cookies cool to room temperature before enjoying
