A fresh delicious Greek pasta salad made with orzo pasta, red bell peppers, onion, feta, green olives, and is mixed with a tasty homemade Greek salad dressing that’s a bit tangy and garlicy. This makes a large serving of pasta salad which is great for parties or family gatherings. FYI, you won’t have any leftovers if you bring to a party, it’s THAT good!

Ingredients
For the Dressing:
- ½ cup extra virgin olive oil
- ¼ cup Knwble Grwn Flax Seed Oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 tablespoon Rodelle Greek Seasoning
- 2 tablespoons of lemon juice (about ½ lemon) - fresh squeezed preferred
For the Salad:
- 1lb orzo, cooked according to the directions on the box, and cooled
- 1 red bell pepper, diced
- ½ red onion, diced
- 1 cup crumbled feta
- 1 cup green olives
- Rodelle Greek Salad dressing
- 1/3 cup sliced almonds (optional)

For the Dressing:
- Put all ingredients into a blender/food processor and mix until combined
- Store for up to 2 weeks in an airtight container in the fridge
- **Separation is natural, shake before use
Pasta Salad Assembly:
- Mix all ingredients together in a bowl, ensuring all pasta is covered with dressing
Notes:
- Store pasta salad in the fridge up to 4-5 days.
