These parfaits are perfect for a healthier dessert option. And they might even be virtuous enough for breakfast!

  • 1 ripe avocado
  • 3/4 cups Greek yogurt
  • 4 ounces melted semi-sweet chocolate
  • 2 tsp Rodelle Vanilla Paste
  • 1 tbsp peanut butter
  • 1/4 tsp salt
  1. Add 1 ripe avocado, 3/4 cups of Greek yogurt, 4 ounces melted semi-sweet chocolate, 2 tsp. Rodelle Vanilla Paste, 1 tbsp. peanut butter and 1/4 tsp. salt to your blender. Blend on high until smooth and creamy.
  2. Divide the pudding between 2 serving glasses. Top with another 2-3 tbsp. Greek yogurt. Then cover and refrigerate until well chilled. Serve with additional toppings (granola, fruit, etc.), if desired.
