These cookies taste just like hot cocoa. Sweet and chocolatey with a hint of vanilla and to top it off, a marshmallow placed right in the center!

Ingredients
- 1/2 c. unsalted butter, softened
- 3/4 c. granulated sugar
- 1/2 c. packed light brown sugar
- 1 egg
- 1tsp Rodelle Pure Vanilla Extract
- 1 1/2c. All Purpose flour
- 1/4c. Rodelle Gourmet Baking Cocoa
- 1/2tsp. Salt
- 1/2 tsp baking soda
- 1tsp baking powder
- 1/2 c. semisweet chocoalte chips
- 12 large marshmallows, cut in half horizontally or 1 cup vanilla marshmallow bites

- Preheat oven to 375F
- Line a baking sheet with parchment paper and set aside
- Cream butter and sugars together until light and fluffy.
- Beat in egg and vanilla until combined.
- In a separate bowl, whisk together flour, baking cocoa, baking soda, baking powder, and salt
- Add the dry mix to the butter mixture beat on low speed until the dough is formed
- Once dough is formed, gently stir in chocolate chips and mallow bites, if using.
- Scoop dough using a medium cookie scoop (~1 tablespoon), and place 2 inches apart on preppared baking sheet
- Bake for 8-10 minutes, or until base of cookie begins to set. DO NOT OVERBAKE
- Pull cookies from oven, and place half marshmallow (if using), cut side down onto cookie and place in oven for another 2 minutes.
- After cookies have finished baking, let cool for a few minutes on the baking sheet, then transfer to a wire cooling rack.
- Let cookies cool to room temperature before enjoying
