Ingredients
For the Chickpea Fritters
- 2- 15 ounce cans chickpeas
- ¾ cup all-purpose flour
- ½ cup grated parmesan cheese
- 2 tbsp chopped parsley
- ¼ cup water
- ¼ cup olive oil
- ½ lemon, zested and juiced
- 2 tsp Rodelle Greek Seasoning
- 1 tsp cumin
For the Tzatziki Sauce
- 1 cup cucumber, grated
- 2 cups Greek yogurt
- ½ tbsp olive oil
- ½ lemon, zested and juiced
- 2 garlic cloves, finely minced
- 2 tbsp fresh dill, minced
- 2 tbsp fresh mint, minced
- 2 tsp Rodelle Greek Seasoning

Directions
- For the Chickpea Fritters, combine all ingredients in a food processor except the flour, and pulse until well-combined and smooth. Transfer to a mixing bowl and stir in the flour until well-incorporated and no lumps remain. Form into 12 even-sized patties, about 3 tbsp each. Press down to form a disk shape, about 1/2 inch thick.
- Preheat the oven to 375 F. In a large pan, heat 2 tbsp olive oil. Cook the patties for 2-3 minutes on each side until golden brown and crispy. Place on a half sheet pan lined with a wire rack. Finish baking in the prepared oven for 10 minutes, and transfer to a serving platter.
- For the Tzatziki Sauce, combine all ingredients in a bowl and mix until smooth. Transfer to a serving bowl and garnish with lemon zest and dill. Serve cold with the Chickpea Fritters.
Tips
- Pulse the chickpea mixture until well-combined and smooth to remove any lumps of chickpeas.
