Why Madagascar Bourbon Vanilla?
Madagascar Bourbon vanilla is the gold standard of vanilla grown along Madagascar’s northeastern coast in a tropical climate that produces some of the world’s most aromatic and flavorful vanilla orchids.
“Bourbon” doesn’t refer to whiskey. The name comes from Réunion Island, formerly called Île Bourbon, where French colonists first developed the technique of hand-pollinating vanilla flowers in the 1840s. That technique spread to Madagascar, and the name stuck. Madagascar Bourbon vanilla is known worldwide for its rich, creamy, caramel-forward sweetness with a long, complex finish.
How to use vanilla beans:
- Split the pod lengthwise with a paring knife.
- Use the back of the knife to scrape out the seeds (vanilla caviar).
- Add seeds and/or pod to your recipe. Infuse the pod in warm cream, milk, or custard for 15–30 minutes for maximum flavor.
- After use, don’t throw the spent pod away! If you have used it in custard, it should be composted or thrown out. But if you have just scraped the seeds, put the pod in sugar to make vanilla sugar, or add it to vodka for homemade vanilla extract.

A: Grade A (also called Gourmet or Prime). Grade A beans have a moisture content of 30–35%, which gives them the plump, pliable texture that indicates premium quality. Grade B beans are drier and better suited for extract-making; Grade A beans are ideal for direct use in recipes like custards, ice cream or whipped cream.
Q: How should I store whole vanilla beans?
A: In an airtight glass jar or container at room temperature, away from direct light and heat. Do not refrigerate. Stored properly, they’ll stay moist and aromatic for 1–2 years.
Q: Can I reuse vanilla beans after scraping?
A: Yes. After scraping the seeds, the empty pod still contains flavor. Steep it in warm milk or cream for ice cream, panna cotta, or custard. Drop it into a canister of sugar to make vanilla sugar. Dry and grind the pod into vanilla bean powder.
