Strawberry Almond Shortcakes with Vanilla Yogurt Whipped Cream
“Strawberry shortcakes are a classic summertime dessert. While it is easy to enjoy fresh, ripe strawberries no matter how they are presented, the cake portion of strawberry shortcake desserts often leaves a lot to be desired. These Strawberry Almond Shortcakes showcase strawberries with a tender almond cake that really compliments them and turns an everyday dessert into something to get excited about.
The almond cakes are made with almond meal, also known as ground almonds or almond flour. The almond meal gives the cake a dense and moist crumb, without making the cakes too heavy. A bit of almond extract highlights the almond meal even more, and each of the cakes is topped with a sprinkle of sliced almonds to add a little texture. The cakes are baked in muffin cups and are just the right size for a single-serving dessert when they are sliced and filled with fresh berries!
To take this dessert over-the-top, I filled the shortcakes with Vanilla Bean Yogurt Whipped Cream and macerated the berries in Rodelle Vanilla Sugar before using them. Macerating the berries in a little bit of sugar helps them start to release their natural juices and gives every berry a little extra sweetness. The juices from the berries will start to be absorbed into the cake as you plate each portion, which helps to tie everything together. The flavors of almond, vanilla and strawberry work perfectly here and put a beautiful twist on a summertime favorite.”
