Ingredients
Syrup
- 3/4 cup fresh or frozen blackberries
- 1/2 cup water
- 1/2 cup sugar
- 1 tsp Rodelle Vanilla Extract
Pancakes
- Pancake batter, prepare batter according to package instructions
- 1 tsp Rodelle Vanilla Extract

Syrup
- In a medium saucepan combine all ingredients. Bring to boil. Turn heat to low and simmer until liquid has reduced by half (about 30 minutes).
- Remove pan from heat. Using a blender, puree the ingredients together for 10 seconds. Strain mixture over a small bowl, separating syrup from the solids.
Mini Pancakes:
- After you have prepared pancake batter, according to packaging instructions, combine 1 tsp Rodelle Vanilla Extract.
- Spoon coin-sized scoop of batter over medium-heated stove pan. Cook until golden brown.
- Stack mini pancakes, 2-3 high and secure with toothpick. Drizzle syrup overtop and enjoy!
