Today’s colorful recipe submission is a Drunken Cherry Coconut Ice Cream with Dark Chocolate and Toasted Pecans! Mmm! It has been created by author Kristin Hoffman of BakerBettie.com from Lawrence, KS!
“I like to focus on food that is amazingly delicious yet can still be enjoyed by those who have special dietary needs. This ice cream is vegan and refined sugar free, but you would know that unless you were told. The healthy fat of the coconut milk gives this dairy free ice cream an amazingly creamy, and rich texture.”

Today’s featured recipe submission comes to us from toasty Fort Myers, Florida. In fact, creator Arlene Mobley (author of Flour on My Face) said it is so hot that she had to wait until an overcast day in order to create her Toasted Coconut Ice Cream masterpiece!
“If you’ve ever attempted to eat a bowl of ice cream or an ice pop in temps over 90 you know it starts to melt immediately.
I picked an overcast day to take the pictures for this post so I had a little more time. This recipe turned out so good. Every time I make a batch of homemade ice cream I think I have found my favorite flavor. I’ve come to the conclusion there is no bad homemade ice cream out there.”
Thank you so much for the submission Arlene, and GOOD LUCK!
We love The Great American Ice Cream Challenge! It has been so wonderful to see what amazing recipes you all create! Today our featured recipe comes to us from New York City, NY by Christina Briscoe.
This recipe cleverly features roasted strawberries!! Mmmm!!
“I have always enjoyed fresh homemade ice cream especially when it is made
with produce in it’s prime season. Strawberries are in season now and they
are packed with flavor. I chose to roast my strawberries because that
strengthens their natural flavor, which is sometimes washed out during the
ice cream churning process. Black pepper gives this ice cream a nice
earthy, summer after taste.”
Thank you so much for recipe entry Christina and GOOD LUCK! And don’t forget everyone- JUST ONE WEEK LEFT!
