  • 2 tablespoons sugar
  • 2 teaspoons water
  • 1 Rodelle Vanilla Bean, split and scraped
Uses
Directions
  1. Clean the fruit or berries. Hull, core, and quarter the strawberries.
  2. Peel, pit, and cut the peaches into ½ inch chunks.
  3. In a small saucepan combine the fruit or berries, sugar, water, and vanilla seeds. Heat over medium heat until just boiling, reduce heat and simmer for 10 minutes.
  4. Turn off heat and let the puree cool before adding to cocktail ingredients.
  5. For all of the cocktails, blend the fruit puree and ingredients together in a blender on “blend” speed. (For the peach puree, we recommend putting the peaches in the blender first and pulse for a few seconds, then add the champagne and pulse the mixture together).
  6. Pour into 2-ounce shot glasses about ¾ full. Set the glasses on a tray and freeze for 15 – 20 minutes (just enough to harden the mixtures a little bit).
  7. Place the Popsicle sticks in the center of the glass. The drinks should be frozen enough at this point for the stick to stay upright. Freeze until ready to serve (at least 2 hours).
  8. Substitutions: Easily double the recipes for 12 glasses. We found the 2 ounce shot glasses come in packs of 6.
